This caramel icing will be the best icing you’ll ever try! A four-ingredient icing that is a breeze to make. My favourite icing of all time! Perfect for cupcakes or cakes. Beware though, you’ll be eating this icing while making it.
Perfectly sweet with a traditional caramel flavour. Whipping this up is not only fun but is mesmerizing and hypnotizing as well. You’ll find yourself simply staring at this sweet confection while whisking.
Ingredients
3 cups white granulated sugar
1 ⅓ cups white whole milk
1 ½ stick cold butter
5 tablespoons white granulated sugar
How to make My Favorite Caramel Icing
Step 1: In a heavy saucepan, combine 3 cups sugar ad milk on medium heat. Stir for several minutes and continue to heat.
Step 2: Meanwhile, liquify 5 tbsp sugar in a small black iron skillet over medium to medium-high heat. Keep stirring until the sugar has dissolved and golden brown. Be careful, it will be bubbling hot.
Step 3: Pour the browned sugar into the milk and sugar mixture and whisk. Continue to cook for 15 minutes more or until the mixture reached a very soft ball stage. Test by dropping a small spoon of mixture into a small glass of cool water. When the mixture turned in to a small softball, it is ready.
Step 4: Take the pan out of the heat and add 1 ½ stick of cold butter. Mix with an electric mixer until you reached spreading consistency. Note: Never use margarine.
Step 5: Add a tbsp of milk at a time if the mixture is too thick.
Step 6: Ensure that the cake has fully cooled before frosting or this heavy icing will cause the top of the cake to split.
