I got this cake for my birthday and I love it so much that I asked my friend for the recipe! I am so glad that she gave it to me. Give it a try and be amazed by how delicious every layer is. Enjoy!
Ingredients:
CAKE:
3 c all-purpose flour, sifted
1 tsp ground cinnamon
1¼ tsp kosher salt
¼ tsp ground nutmeg
1 tsp baking soda
3 Eggs, beaten
1½ c sugar
1⅓ c vegetable oil
¼ c buttermilk
2 tsp vanilla extract
2 c very ripe banana, mashed (about 4 medium bananas or 16 ounces)
1 (8 ounces) can crushed pineapple (or fresh chopped pineapple)
2 c toasted chopped pecans, divided
CREAM CHEESE FROSTING:
1 c (2 sticks) butter, softened
2 (8 ounces) packages of cream cheese, softened
¼ tsp kosher salt
6 c powdered sugar
2 tsp vanilla extract
Directions:
Step 1: Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Step 2: Apply cooking spray and sprinkle flour in three 8-inch cake pans.
Step 3: In a large mixing bowl, add the flour, nutmeg, salt, baking soda, and cinnamon. Whisk until well mixed.
Step 4: Add in the eggs, vegetable oil, buttermilk, vanilla extract, and sugar. Beat until well combined.
Step 5: Add in the mashed bananas, 1 cup of chopped pecans, and crushed pineapple. Stir until well combined.
Step 6: Transfer the batter into the prepared cake pans.
Step 7: Place them inside the preheated oven and bake for 25 to 30 minutes or until a toothpick comes out clean after inserting it in the middle of each cake.
Step 8: Remove from the oven and let them sit on a wire rack to cool for at least 10 minutes.
Make the Cream Cheese Frosting:
Step 1: In a large mixing bowl, add the butter, salt, and cream cheese. Use a hand mixer to mix until well combined.
Step 2: Add a little sugar at a time and mix every addition.
Step 3: Add the vanilla extract and beat until well blended.
Decorate the Cake:
Step 1: Use a serrated knife to trim the tops of the cakes to level them.
Step 2: Place on a clean serving plate the first cake layer and spread about ¼ of the frosting.
Step 3: To have a nice surface, flip the second layer upside down and put it on top of the first layer.
Step 4: Frost with ¼ frosting.
Step 5: Top with the last cake layer, again flipping it upside down.
Step 6: Frost the whole cake with the rest of the frosting and sprinkle on top the rest of the chopped pecans.
Step 7: Place in the fridge until ready to serve.
