Ingredients:
4 Tbsp butter ½ stick
½ medium onion chopped
2-3 cloves garlic minced
4 tbsp AP flour
2 c low sodium chicken or vegetable stock
1 teaspoon kosher salt
½ teaspoon black pepper
¼ teaspoon paprika or ground nutmeg, optional
3 c broccoli florets or 1 large head, cut into small pieces
1 large carrot grated, julienned or finely chopped
2 c half & half or milk or light or heavy cream
8 ounces block grated cheddar cheese or 2 c (mild, medium, or sharp)
Directions:
Step 1: Place a pot or a large Dutch oven on the stove and turn the heat to medium-high.
Step 2: Add in the butter and allow it to melt.
Step 3: Add in the chopped onion and saute for 3 to 4 minutes or until translucent.
Step 4: Add in the garlic and saute for 1 minute or until aromatic.
Step 5: Whisk in flour and cook for 1 to 2 minutes or until golden.
Step 6: Add in the chicken stock, carrots, broccoli florets, and seasoning. Stir until well mixed and allow it to boil.
Step 7: Simmer for 15 minutes on medium-low heat until the veggies are soft.
Step 8: Add in Cheddar cheese and half & half. Simmer for one more minute until incorporated.
Step 9: Add more seasoning if needed.
Step 10: Serve with toasted bread and enjoy!
