This is my family’s favourite breakfast meal. My kids most requested school lunch, and my go-to for a quick and easy dinner. You can easily feed the whole town with this, simply double the recipe and save one pan for later. This dish also freezes pretty well.
If you have picky eaters at home, this dish is perfect! And if you are a busy mom like myself, this is excellent. With only a few simple ingredients, this is ready in no time! Plus, you can make extra for later. Just freeze it and pop in the oven when ready to serve.
Ingredients:
1 pound ground beef
½ medium onion, diced
1 can(s) cream of chicken soup
1 can(s) cream of mushroom soup
1 cup instant rice
1 cup shredded cheddar cheese
½ cup American cheese chunks
1 can(s) corn
salt & pepper to taste
Directions:
Step 1: Cook the beef and onion until brown and season with salt and pepper. Drain any excess grease.
Step 2: Prepare the oven. Preheat it to 375 degrees.
Step 3: Grease a 9 x 13-inch baking dish.
Step 4: Combine the rice, soups, corn, and American cheese chunks in a medium bowl.
Step 5: Transfer the cooked beef with onion into the prepared baking dish.
Step 6: Pour the rice mixture on top.
Step 7: Use foil to cover the dish.
Step 8: Place inside the preheated oven and bake for about 30 to 45 minutes.
Step 9: Take the casserole out of the oven and sprinkle with shredded cheese.
Step 10: Bake for another 5 minutes or until the cheese has melted.
