Zucchini and yellow squash are two of my favourite. They are versatile and goes along anything. With cheese and a few pantry essential, they make a wonderful dish that no one can say no to. Ingredients:
2 tablespoons butter
1 large zucchini, sliced
1 large yellow squash, sliced
2 medium shallots, minced
1 teaspoon garlic (fresh or jar)
½ cup heavy cream
shredded cheese, just a handful to sprinkle
salt and pepper, to taste
sprinkle of oregano
Parmesan cheese, to taste
Directions:
Step 1: Prepare the oven. Preheat it to 450 degrees.
Step 2: Melt the butter in a large skillet. Saute the shallots and onions until translucent.
Step 3: Add in the zucchini, squash and heavy cream. Season with salt and pepper to taste and sprinkle over the Parmesan cheese.
Step 4: Continue to cook for about 8 to 10 minutes or until bubbly.
Step 5: Shift the mixture into an oven-safe baking dish and sprinkle with extra Parmesan and shredded cheese.
Step 6: Place inside the preheated oven and bake for about 10 to 14 minutes or until bubbly and golden brown.
