I have tried Zucchini bread before and it was amazing, but try adding blueberries in it and you have yourself the treat to brag about. My friends and family love this so much that every time there is a gathering, they always tell me to bake it. Of course, I always do! Ingredients:
3 Eggs, lightly beaten
1 cup of vegetable oil
3 teaspoon vanilla extract
2 ¼ cups white sugar
2 cups shredded zucchini
3 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking powder
¼ teaspoon baking soda
1 tablespoon ground cinnamon
2 cups fresh blueberries
Directions:
Step 1: Prepare the oven and preheat to 350 degrees F or 175 degrees C.
Step 2: Apply cooking spray in 2 loaf pans.
Step 3: In a large mixing bowl, add in the eggs, sugar, and vanilla. Whisk until well mixed.
Step 4: Toss in the zucchini and stir until well blended.
Step 5: In a medium mixing bowl, add the flour, baking powder, cinnamon, salt, and baking soda. Whisk until well combined.
Step 6: Add in the blueberries and stir until well blended.
Step 7: Transfer the mixture into the prepared loaf pans.
Step 8: Place them inside the preheated oven and bake for 1 hour or until a knife comes out clean after inserting it in the middle of 1 bread.
Step 9: Remove from the oven and let them sit on a wire rack to cool for 20 minutes at room temperature.
Step 10: Serve and enjoy!
