I can’t get enough of this Pineapple Cake! The tropical taste of the pineapple is so refreshing! I have always wanted to add more fruits to this cake. Next time, I definitely will! Feel free to add more ingredients if you wish. By the way, this cake is best served with coffee and good company. Enjoy!
Ingredients:
The cake has no oil or butter, but the frosting has butter in it.
2 cups all-purpose flour
2 cups of sugar
2 eggs
1 teaspoon baking soda
1 teaspoon vanilla
1 pinch salt
1 can(s) crushed pineapple (undrained) in its own juice – not syrup, 20 ounces
1 cup chopped nuts, optional
CREAM CHEESE FROSTING:
½ cup butter or 1 stick
1 package cream cheese, softened, 8 ounces
1 teaspoon vanilla
1 ½ cup confectioners’ sugar
shredded coconut for garnish, optional
Directions:
Step 1: Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Step 2: Apply cooking spray in a 9×13-inch cake pan.
Step 3: In a large mixing bowl, add flour, sugar, egg, baking soda, vanilla, salt, pineapple, and nuts. Stir until combined.
Step 4: Transfer the cake mixture into the prepared pan.
Step 5: Place it inside the preheated oven and bake for 35 to 40 minutes or until the colour turns golden brown.
Step 6: Remove from the oven and let it sit on a wire rack to cool at room temperature.
How To Make the Frosting:
Step 1: In a medium mixing bowl, add the butter, cream cheese, and vanilla. Beat until well mixed and smooth.
Step 2: Add in powdered sugar gradually. Beat every addition.
Step 3: Spread the frosting over the warm cake.
Step 4: Garnish with chopped nuts on top.
Step 5: Serve and enjoy!
