Ingredients:
4 (8”) flour tortillas
¼ cup ranch dressing
1 cup cooked rotisserie chicken cut in small bite-size pieces
4 slices crispy cooked bacon chopped
1 ⅓ cup Colby jack shredded
2 tablespoons butter
Directions:
Step 1: Add about 2 tbsp ranch dressing over 2 pieces of tortillas. Spread and top individually with half of the chicken, half bacon, and half cheese. Top them with a tortilla.
Step 2: In a large skillet, melt 1 tbsp butter over medium heat.
Step 3: Place 1 quesadilla and cook until the bottom has lightly browned.
Step 4: Flip and continue to cook the other side until lightly browned.
Step 5: Add another tbsp of butter into the skillet and cook the remaining quesadilla.
Step 6: Serve immediately. Enjoy!
