Pecan pie is one of those pies that never gets old. A crowd favourite and always a hit everywhere you bring this. Not to mention that it is one of the easiest to make and requires only a few simple ingredients. A no-fuss and a must-have.
This pie reminds me of my mom. She loves pie and she makes them whenever she feels to. Her speciality and favourite is this same pie. I think I got my love for pies from my mom. She even made a joke that my pops fell in love with her because of her pies. That’s sweet, don’t you think? Anyway, my mom’s name is Sarah and she’s the queen of pies!
Ingredients:
½ cup butter
1 cup of sugar
4 eggs, beaten
1 cup light corn syrup
1 teaspoon vanilla
¼ teaspoon salt
1 ½ cup pecan halves
1 9” unbaked pie crust
Directions:
Step 1: Prepare the oven. Preheat it to 325 degrees F.
Step 2: Ready your 9-inch unbaked pie shell.
Step 3: Combine the butter, sugar, and corn syrup in a medium saucepan. Heat over low heat and continue stirring until the sugar has dissolved. Once done, remove from the heat and allow to cool for a bit.
Step 4: Mix the eggs, vanilla, and salt in a small mixing bowl. Add this to the syrup and stir well.
Step 5: Add the pecans at the bottom of the prepared pie shell and pour the syrup over. The pecans will float. Or add the pecans after the syrup and decorate as you please.
Step 6: Place inside the preheated oven and bake for about 50 to 55 minutes.
Step 7: Once done, remove from the oven and serve warm or cold or with a dollop of fresh whipped cream. Enjoy!
