These Muffins are such a delight! You will surely fall in love with these celestial treats! All the flavours compliment well with each other. Feel free to add more ingredients if you feel like it. Enjoy!
Ingredients:
Streusel Topping:
½ cup flour
¼ cup granulated sugar
¼ teaspoon cinnamon
3 T. butter, melted
Cream Cheese Filling:
10 ounces cream cheese, softened
¼ c. sugar
splash of vanilla
Blueberry Muffins:
¾c. flour
1 teaspoon baking powder
⅛ teaspoon salt
⅓ cup granulated sugar
1 egg
⅓ cup sour cream
¾c. blueberries-fresh or frozen (reserve some for topping)
Directions:
Step 1: Prepare the oven and preheat to 200 degrees C or 400 degrees F.
Step 2: Line with paper liners 6 cupcake tins.
To Make the Crumbs:
Step 1: In a small mixing bowl, add the flour, cinnamon, and sugar. Whisk until well mixed.
Step 2: Add in the butter and stir until well mixed.
To Make the Cream cheese Filling:
Step 1: In a small mixing bowl, add cheese, sugar, and vanilla. Stir until well mixed.
To Make the Muffins:
Step 1: In a small mixing bowl, add the egg and sugar. Whisk until well mixed.
Step 2: Add the sour cream and stir until well blended.
Step 3: Add in the dry ingredients and half of the blueberries. Stir until well combined.
Step 4: Divide half of the batter into the prepared muffin cups.
Step 5: Drop a dollop of cream cheese on top of each muffin cup.
Step 6: Divide the rest of the batter and put it on top of each muffin cup.
Step 7: Top each muffin with the streusel and the rest of the berries.
Step 8: Place the muffin cups inside the preheated oven and bake for 5 minutes at 400 degrees F.
Step 9: Reduce the heat to 375 degrees F and bake for another 15 minutes or until done.
Step 10: Remove from the oven let them sit on a wire rack to cool.
Step 11: Serve and enjoy!
