Ingredients:
3 c shredded chicken (I used one large boneless chicken breast)
1-2 chipotle peppers in adobo sauce, minced
3 c shredded cheese (such as Monterey jack, cheddar, or a combination of your favourite cheese)
12 7- inch flour tortillas (you can use corn tortillas if you prefer)
2-3 c canola oil for frying (or 1 tbsp canola oil to brush the tortillas with if baking)
Creamy Avocado Salsa Verde
Pico de Gallo
Shredded lettuce
Shredded cotija cheese
Mexican crema or sour cream
Directions:
Add the shredded chicken breast, adobo sauce, and chipotle peppers into a mixing bowl. Toss until well combined.
Put the tortillas onto a flat surface, then top each with ⅓ cup of the chicken mixture.
Sprinkle ¼ cup of shredded cheese over the tortillas.
Roll each tortilla and use a toothpick to lock it.
To Fry:
Place a heavy frying pan on the stove and turn the heat to medium.
Add ½-inch of oil and allow it to become hot.
Add the tortillas in batches into the hot oil and cook until done. Remove from the pan onto a clean plate lined with paper towels to drain any excess oil. Repeat the process to the rest of the tortillas.
Serve and enjoy!
To Bake:
Prepare the oven and preheat to 215 degrees C or 425 degrees F.
Line a baking sheet with parchment paper.
Arrange the tortillas onto the prepared baking sheet.
Apply canola oil over each tortilla.
Place them inside the preheated oven and bake for about 15 minutes or until golden brown. Remove from the oven onto a clean serving plate.
Serve and enjoy!
Note:
Serve with sour cream, Mexican crema, shredded lettuce, or grated cotija cheese.
