¾ -1 c Red Russian dressing
8 boneless, skinless chicken thighs
¾ -1 c apricot jam/preserves
Directions:
Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Apply cooking spray to a 9×13-inch baking dish.
Rinse the chicken thighs with water, then use paper towels to pat them dry. Remove any fat.
Place the chicken thighs into the greased baking dish and arrange them in a single layer. Season with just black pepper.
In a mixing bowl, add jam, dressing, and soup mix into a mixing bowl. Stir until well blended.
Pour the mixture on top of the chicken thighs. Cover with foil.
Place the baking dish inside the preheated oven and bake the chicken thighs for about 20 minutes.
Remove the foil cover and bake for another 20 minutes or until done.
Serve right away over rice. Enjoy!
Notes:
Don’t forget to spoon the delicious sauce over.
Feel free to use Peach Jam for this recipe instead of Apricot Jam.
You can either use Creamy Russian dressing or Red Russian dressing for this recipe.
