Ingredients:
1-lb potatoes any variety, peeled and chopped into 1/-inch pieces
½ – 1 tsp kosher salt
½ tsp freshly ground black pepper
1 tbsp refined coconut oil or light olive oil plus more only if needed
1 small onion chopped into ½-inch piece
3 cloves garlic minced
1 lb kielbasa sliced thin
½ medium head green cabbage sliced into ribbons, about 4 c worth
2 tbsp water
Directions:
Slice the peeled potatoes and put them into a mixing bowl after rinsing with water.
Season the potatoes with salt and pepper. Toss until well coated.
Place the potatoes inside the microwave and heat for about 6 minutes or until they are tender.
Place a large skillet on the stove and turn the heat to medium-high.
Add oil and allow it to become hot.
Add the onions and sauté until translucent.
Add the kielbasa and garlic. Cook for 3 minutes or until brown and aromatic.
Add the potatoes and spread them evenly. Cook for another 3 minutes or until they turn brown as well.
Add the cabbage, salt, and pepper. Toss until well mixed.
Add 2 tbsp of water, then turn the heat down to low.
Cover the skillet and simmer everything for 2 minutes.
