Ingredients:
½ c cabbage, chopped
2 scallions, chopped
1 tablespoon sesame oil
2 tablespoons coconut or olive oil
1 ½ c quinoa, cooked
1 carrot, chopped
⅓ c frozen peas
3 Eggs
½ c cauliflower or broccoli, chopped
1-2 tablespoons soy sauce
1 garlic clove, minced
Directions:
Place a large non-stick pan on the stove and turn the heat to medium. Add oil and allow it to become hot.
Add the eggs into the hot pan, then scramble them.
Add the garlic clove and stir until well combined.
Add the peas and cauliflower, then stir again until well incorporated. Cook for about 2 minutes.
Put the quinoa together with the remaining ingredients, then stir until well combined. Cook for 5 more minutes. Add sesame oil and soy sauce if necessary. Remove the pan from the heat.
Serve right away. Enjoy!
Notes:
Feel free to add cooked chicken to this dish if you prefer.
Double the ingredients if you are serving more than 2 people.
Place any leftovers in an airtight container, then place them in the fridge. Reheat in the microwave for a few minutes before serving again.
