Ingredients:
2 medium zucchini
2 large carrots peeled
¾ c cashews
1 tbsp fresh cilantro chopped
Sauce:
2 heaping tbsp peanut butter
½ tbsp hoisin sauce
½ tbsp sriracha sauce (or more if you like it spicy!)
1 tsp soy sauce
Juice of ½ lime
2 cloves garlic minced
Directions:
Slice the carrots and zucchini into thin spirals.
Place a skillet on the stove, then add the hoisin sauce, peanut butter, soy sauce, sriracha sauce, garlic, and lime juice. Stir until well mixed. Turn the heat to medium-high. Cook for about 2 minutes or until the garlic is aromatic.
Add the carrots, zucchini, and cashews. Toss and cook for about 5 minutes. Make sure to toss every 10 seconds to prevent them from burning.
Add the cilantro and toss until well mixed.
Serve hot and enjoy!

It is important not to overcook the dish.
