Ingredients:
1 large Egg
1 tbsp fresh garlic, minced
A pinch of salt, to taste
1 c vegetables, fresh or frozen, type of your choice
A pinch of black pepper, to taste
1 tbsp vegetable oil
2 tbsp soy sauce, ideally low-sodium
1 c water
1 c Minute Rice
Directions:
Place a saucepan on the stove and turn the heat to medium.
Add soy sauce and water, then stir until well blended. Allow the mixture to boil.
Add the uncooked rice, then refer to the directions provided on the package on how to cook it.
Meanwhile, place the skillet on the stove and turn the heat to medium.
Add vegetable oil and allow it to become hot.
Add the veggies, garlic, pepper, and salt. Stir fry for about 3 minutes or until soft and aromatic.
Add the cracked eggs into the hot skillet, then cook until scrambled. This usually takes about 3 minutes.
Transfer the cooked rice into the skillet with the eggs, then stir until well mixed. Cook everything for 3 more minutes.
Serve right away. Enjoy!
