Potato And Chicken Casserole Recipe

This recipe is perfect for busy weekdays when you want to spend more time with your family. Potatoes are a main course, while the chicken provides you with some extra protein and filling. You can make this casserole in a few simple steps, so give it a try!

Ingredients
  

  • Olive Oil
  • 1 onion peeled and diced
  • 3 potatoes peeled and diced
  • 3 Chicken breasts
  • 1 Tomato
  • 120 g 1 cup Gruyére cheese (shredded)
  • Salt and black pepper to taste
  • For sauce:
  • 2 eggs
  • 200 ml of heavy cream
  • 1 teaspoon Curry
  • Provencal herbs

Method
 

  1. Preheat your oven to 390F (200°C)
  2. Start by spraying a 9x13 inch baking dish with olive oil.
  3. Then, spread the onion slices in the bottom of the dish.
  4. Next, add the potatoes slices on top of the onion. And then add salt, black pepper and olive oil on the top of potatoes.
  5. Cut the chicken breast into small cubes and then place it over the potatoes.
  6. For sauce:
  7. In a mixing bowl put two eggs and add 200ml of heavy cream, 1 tsp of curry and 1 tsp of Provencal herbs. Whisk well and then Pour the sauce over the top.
  8. Cover it with aluminum foil and put on oven (200°C) for 40-50 minutes.
  9. Finally take off from oven and sprinkle the shredded cheese; then put slices of tomato in the top of cheese and add sprinkle more shredded cheese on top of tomatoes then put it back on oven for more 10-15 minutes. Enjoy
