Ingredients:
1 tablespoon cooking oil, divided
8 ounces mushrooms
4 large Eggs
2 ounces feta cheese
1 clove garlic, minced
1 c milk
1 10 ounces box frozen chopped spinach
½ c shredded mozzarella
¼ c grated Parmesan
⅛ teaspoon salt
¼ teaspoon pepper
Directions:
Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Squeeze the spinach and remove most of the liquid. Remove any dirt off the mushrooms, then slice them into thin pieces.
Place a skillet on the stove and turn the heat to medium.
Add oil and allow it to become hot.
Add the mushrooms and sauté until soft and dry.
Apply cooking spray on a 9-inch pie plate.
Add the sauteed mushrooms to the prepared pie plate.
Add the spinach and crumbled feta over the mushrooms and spread it evenly.
Add eggs, milk, Parmesan, and pepper into a mixing bowl. Whisk until well blended.
Pour the egg mixture on top of the mushrooms and spread it evenly.
Sprinkle a generous amount of shredded mozzarella cheese on top.
