This tortilla soup is my best comfort food! Not only will it satisfy all your cravings, but it is also food for the soul! I kid you not! You have got to taste the rich flavours in this delicious dish! I have listed all the things you will be needing so all you have to do is to follow them step by step and you are good to go! Ingredients:
6 6-inch corn tortillas cut ¼-inch strips
1 tbsp olive oil
1 onion chopped
3 cloves garlic large, minced
1 jalapeño diced and seeded
2 tsp ground cumin
2 tsp chilli powder
14 ounces crushed tomatoes
1 can Rotel
4 c chicken broth
14 ½ ounces black beans
1 c frozen corn
2 chicken breasts
¼ c cilantro
Directions:
Place a pan on the stove and turn the heat to medium.
Add olive oil and allow it to become hot.
Add the garlic and onion, then saute until aromatic and translucent.
Transfer them into a slow cooker.
Add the rest of the ingredients aside from the oil and tortillas.
Cover and cook for about 4 hours on a high setting.
Remove the chicken breasts from the pot and use two forks to shred them into small pieces.
Put the shredded chicken back into the pot and stir until well mixed.
Serve with the tortilla strips and enjoy!
For the Crispy Tortillas:
Place a pan on the stove and turn the heat to medium-high.
Add oil and allow it to become hot.
Add the tortilla strips and fry each until crispy.
Remove from the pan onto a clean plate lined with paper towels to drain any excess oil.
Serve and enjoy!
