½ c. chopped onion
3 tbsp butter

2 c. 2% milk
1 c. shredded cheddar cheese
Additional pepper, optional
1-½ tsp salt
⅛ tsp pepper
How to make Simple Au Gratin Potatoes
Step 1: Prepare the oven. Preheat it to 350 degrees.
Step 2: Melt the butter in a large saucepan over low heat. Once melted, stir in the flour, salt, and pepper until smooth. Then, slowly add the milk. Bring the mixture to a boil and cook for about 2 minutes, stirring until thickened. When done, take the pan off the heat and whisk in the cheese until melted. Next, add the potatoes along with the onion.
Step 3: Into a 2-quart greased baking dish, transfer everything. Put the lid on and place the baking dish in the preheated oven. Bake for about 1 hour. Remove the cover and bake for another 30 to 40 minutes or until the potatoes are tender. You can top it with more pepper if desired.
TIPS:
To prevent curdling, thicken the milk with flour. Also, use a high-starch potato such as a russet. You can also use leftover russet potatoes.
You can swap the milk with heavy cream if the au gratin is watery. Russet potatoes are also the perfect variety to use for this recipe as they have less water and more starch.
These Au Gratin Potatoes are great to pair with lemon thyme chicken. For a steakhouse dinner, you can also serve this with garlic-grilled steak or other steak recipes.
