Ingredients:
¼ c olive oil
4 cloves garlic, minced
1 c fresh orange juice
1 onion, diced
2 to 3 fresh thyme sprigs
½ c fresh lemon juice
3 to 4 pounds bone-in chicken parts
2 oranges, sliced
½ teaspoon paprika
2 to 3 fresh rosemary sprigs
Sea salt and freshly ground black pepper
1 lemon, sliced
½ tablespoon dried oregano
¼ teaspoon red pepper flakes (optional)
Directions:
Prepare the oven and preheat to 200 degrees C or 400 degrees F.
Add the garlic, paprika, olive oil, lemon juice, orange juice, dried oregano, lemon juice, red pepper flakes, salt, and pepper into a mixing bowl. Stir until well blended.
Add half of the lemon and oranges to the bottom of a large baking dish.
Lay the chicken slices over the fruits together with rosemary, thyme, and the rest of the lemon and orange slices.
Add the sauce on top of the chicken slices and spread it evenly.
Place the baking dish inside the preheated oven and bake for 1 hour or until done.
Remove from the oven and allow it to rest for a few minutes at room temperature.
Serve warm and enjoy!
