Ingredients:
3 tablespoons butter, melted
4 teaspoons olive oil, divided
2 c chopped bell pepper (about 2, I use red and green)
1 ¼ pounds boneless skinless chicken breasts, diced into ½-inch cubes
⅔ c chopped red onion
2 teaspoons chilli powder
6 (10-inch burrito size) flour tortillas
1 teaspoon ground cumin
1 tablespoon fresh lime juice
6 ounces cheddar cheese, shredded (1 ½ c)
6 ounces Monterrey jack cheese, shredded (1 ½ c)
2 garlic cloves, minced
Guacamole, sour cream, Pico de Gallo, or salsa, for serving (optional)
Salt and freshly ground black pepper
Directions:
In a mixing bowl, add cumin, chilli powder, pepper, and salt. Whisk until well mixed.
Rub all sides of the chicken with the mixed seasonings.
Place a 12-inch non-stick skillet on the stove and turn the heat to medium-high.
Add 2 teaspoons of olive oil and allow it to become hot.
Add the chicken and cook each side for 6 minutes or until they turn golden brown.
Remove from the skillet and transfer the chicken into a mixing bowl.
Add another 2 teaspoons of oil into the skillet and allow it to become hot.
Add red onion and bell pepper, then sauté until soft.
Add the garlic and sauté until aromatic.
Transfer the sauteed veggies into the bowl with the chicken.
Squeeze lime over everything and toss until well combined.
Brush each tortilla with melted butter.
Use paper towels to wipe clean the skillet, then turn the heat to medium.
In a mixing bowl, add the cheeses and toss until well mixed.
Add one tortilla into the skillet, then sprinkle ½ cup of mixed cheese on one side and ¾ cup of chicken mixture on the other side. Fold the tortilla. Repeat the process with the rest of the ingredients.
Cook for 2 minutes on both sides or until they turn golden brown.
Serve with your favorite toppings. Enjoy!
