Ingredients:
¼ c olive oil
24 oz. fresh sliced mushrooms
4 tbsp butter, divided
2 cloves garlic
1-pound whole wheat penne pasta
3 c reduced-sodium chicken broth, divided
1 c shredded Gruyere cheese
¾ c milk
1 head cauliflower (about 6–7 c of florets)
extras: caramelized onions, bacon, sausage
1 tsp salt
fresh sage, sliced into thin ribbons
Directions:
Place a large pot with water on the stove and turn the heat to high. Allow the water to boil.
Add the pasta and cook until al dente. Drain and drizzle oil, then toss until well coated.
Add water to the same pot, then allow it to boil.
Add the cauliflower and cook for about 5 minutes or until crisp. Set aside.
Place a pan on the stove and turn the heat to medium.
Add butter and allow it to melt. Add garlic and sauté until aromatic.
Transfer the cauliflower into a blender as well as milk, sauteed garlic, 2 cups of broth, and salt. Pulse until pureed.
Prepare the oven and preheat to 200 degrees C or 400 degrees F.
Place a large skillet on the stove and turn the heat to medium.
Add 3 tbsp of butter and allow it to melt.
Add the mushrooms and sauté until soft.
Add the pasta and cauliflower sauce, then toss until well combined.
Add the rest of the broth and stir until well blended.
Transfer everything into a 9×13-inch baking dish and sprinkle a generous amount of cheese on top.
Place it inside the preheated oven and bake for about 10 to 15 minutes.
Remove from the oven and garnish with freshly chopped sage ribbons.
