Ingredients
2 bell peppers, red and or green, chopped
2 pounds boneless, skinless chicken breasts, chopped
1 onion, large, sliced
12 ounces pineapple chunks, fresh or frozen thawed
1 c. barbecue sauce of choice divided
½ teaspoon salt
½ teaspoon black pepper
1 jalapeño seeded and diced
How to make Barbecue Pineapple Chicken
Step 1: Prepare the oven. Preheat it to 400 degrees F. Using cooking spray, grease a baking dish, and set aside.
Step 2: In half, cut the onion and thinly slice. Into bite-size pieces, cut the bell peppers. Next, seed the jalapenos and dice. Set aside.
Step 3: Place the chopped, bite-size chicken pieces in a bowl. Add ⅔ c. of the barbecue sauce. Toss to coat and keep the bowl aside for about 15 minutes to marinate the chicken.
Step 4: In the baking dish, arrange the sliced onion. On top, place the marinated pieces of chicken, then bell peppers and pineapple. Brush the top with the rest of the barbecue sauce. Toss well and sprinkle with diced jalapenos. To taste, season with salt and pepper.
Step 5: Place in the preheated oven and bake for about 30 to 35 minutes or until the internal temperature of the chicken reaches 165 degrees F.
Step 6: Remove from the oven when done, and serve the chicken right away. Do not forget to spoon the sauce and juices over the chicken. Enjoy!
