LOADED SCALLOPED POTATOES

Prep Time: 20 mins | Cook Time: 1 hr 30 mins | Total Time: 1 hr 50 mins | Yield: 10 Servings

You need this badly in your life! Serve it hot and enjoy!

Ingredients:

2 tablespoons extra virgin olive oil

2 onions medium, thinly sliced

12 ounces of cooked and crumbled

4 tablespoons unsalted butter

4 tablespoons all-purpose flour

3 cups whole milk

3 pounds potatoes thinly sliced (use Yukon or russet)

8 ounces cheese I used a combination of sharp cheddar and Gruyere, any cheese will work

salt and pepper to taste

Directions:

Step 1: Prepare the oven and preheat to 175 degrees C or 350 degrees F.

Step 2: Brush with butter a 9×13-inch baking dish.

Step 3: Place a medium skillet on the stove and turn the heat to medium.

Step 4: Add olive oil and allow it to become hot.

Step 5: Add the sliced onion, salt, and pepper. Sauté for a few minutes while stirring from time to time until the color turns brown.

Step 6: Remove the onions from the skillet and place them on a clean plate, then set them aside.

Step 7: Use paper towels to wipe clean the skillet.

Step 8: Add the bacon and cook until greasy and crispy.

Step 9: Remove the crispy bacon from the skillet and place them on a plate lined with paper towels to drain any excess grease.

Step 10: Use paper towels again to wipe clean the skillet.

Step 11: Add butter in the same skillet and allow it to melt.

Step 12: Add flour and whisk until well mixed. This will take about 2 minutes.

Step 13: Add the milk gradually and whisk until well blended and thick. This will take about 2 minutes as well.

Step 14: Remove the skillet from the heat.

To Assemble:

Step 1: Place 1/2 of the potatoes on the prepared baking dish followed by 1/2 of the caramelized onions, 1/2 of the bacon, 1/2 of the cheese, and 1/2 of the sauce.

Step 2: Repeat step 1 until everything is arranged in layers.

Step 3: Cover everything with aluminum foil.

Step 4: Place the baking dish inside the preheated oven and bake for about an hour.

Step 5: Remove the baking dish from the oven and remove the aluminum foil cover.

Step 6: Put the baking dish back into the oven and bake for 30 minutes or until the potatoes are fork-tender.

Step 7: Remove from the oven and allow the potatoes to cool at room temperature for at least 10 minutes.

Step 8: Serve and enjoy!
