Ingredients:
3 Eggs
3 c semisweet chocolate chips
3 c old-fashioned oatmeal
3 c flour
1 tbsp baking powder
2 c angel flake coconut
1 ½ c (3 sticks) butter, at room temperature
1 tbsp baking soda
1 ½ c brown sugar
1 ½ c chopped pecans
1 ½ c sugar
1 tbsp vanilla
½ tsp salt
Directions:
Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Line parchment paper onto baking sheets.
In a mixing bowl, add baking soda, flour, salt, and baking powder. Whisk until well incorporated.
In a separate mixing bowl, add butter and beat until the texture becomes smooth. Add the sugars, then beat until well blended.
Gradually add the eggs, then beat every addition until well incorporated. Add the vanilla and stir until well blended.
Transfer the flour mixture into the bowl with the butter mixture, then whisk until well incorporated.
Add the pecans, oats, coconut, and chocolate chips and stir until well combined.
Form balls out of the dough mixture, then place them onto the prepared baking sheets. Make sure to leave about 3-inches space between each dough.
Place them in the preheated oven and bake for about 15 to 17 minutes or until they turn golden brown.
Remove from the oven and allow them to cool at room temperature.

Notes:
Place any leftovers in an airtight container, then leave them at room temperature. They can last up to 3 to 5 days or 3 months in the freezer.
