Ingredients:
500g / 1 pound Lo Mein, Hokkien, or other medium thickness egg noodles, fresh, prepared per packet
¼ c (65ml) water
1 large red capsicum/bell pepper, sliced (or 2 small)
6 green onions, cut into 5 cm/2-inch lengths
1.5 tablespoon vegetable or peanut oil
2 medium carrots, peeled and cut into 4 x 0.75cm / 1.75 x ⅓-inch batons
300g / 10oz chicken or other protein, sliced 0.5cm / ⅕-inch thick
2 garlic cloves, finely minced
½ onion, finely sliced
SAUCE:
2 tablespoons soy sauce or light soy sauce
1 tablespoon Chinese cooking wine or Mirin
¼ teaspoon white pepper (sub black)
2 tablespoons dark soy sauce
1 teaspoon white sugar (omit if using Mirin)
4 teaspoons cornflour / cornstarch
½ teaspoon sesame oil, toasted, optional
GARNISH (OPTIONAL):
Green onion, finely sliced
Directions:
Add dark soy and corn flour into a large bowl. Stir until well blended.
Add the rest of the ingredients for the sauce, then stir until well mixed.
Add chicken and 2 teaspoons of the sauce into a mixing bowl. Toss until well mixed.
Place a wok on the stove and turn the heat to high.
Add oil and allow it to become hot.
Add the garlic and onion, then sauté for about 30 seconds.
Add the chicken, then cook for about a minute.
Add the bell peppers and carrot, then sauté for 2 minutes or until soft.
Add the sauce, water, and noodles. Toss and cook everything for about 30 seconds.
Sprinkle the green onions, then toss again for one more minute. Make sure that the noodles are well coated with the delicious sauce.
Sprinkle more green onions over each serving to garnish.
Serve right away and enjoy!
