Ingredients:
2 tbsp vegetable oil
¼ c ketchup
⅓ c onion, diced
4 garlic cloves, minced
3-4 boneless, skinless chicken breasts
3 tsp cornstarch dissolved in ¼ c water
½ c honey
⅓ c soy sauce
Sesame seeds & green onion for topping
Rice for serving
Salt and pepper to taste
Directions:
Lay the chicken into your Instant Pot.
Sprinkle salt and pepper over the chicken, then rub each until coated.
In a mixing bowl, add ketchup, soy sauce, oil, honey, garlic, and onion. Stir until well blended.
Pour the mixture on top of the chicken breasts and spread it evenly.
Cover and seal the pot, then cook the chicken breasts for about 15 minutes on a high setting.
Transfer the chicken breasts onto a clean plate.
In a small bowl, add water and cornstarch. Stir until well blended.
Add the slurry or the cornstarch mixture into the pot, then stir until well blended with the sauce.
Press the “Saute” button on the pot, then cook the sauce for a few more minutes until the texture becomes thick.
Slice the chicken into small pieces.
Put the chicken slices back into the pot and toss until well coated by the delicious sauce.
Sprinkle green onions and sesame seeds over each serving to garnish.
Serve over rice and enjoy!
