Ingredients:
Marinade:
3 cloves garlic, minced
⅓ c soy sauce
1 tsp pepper
⅓ c honey
3 tbsp vegetable oil
Skewers:
2 yellow bell peppers
2 red bell peppers
3 chicken breasts, cubed
2 orange bell peppers
Parsley
1 red onion
Wooden skewers
Directions:
In a large container with water, add the wooden skewers and let them soak for about 10 minutes. This step will prevent the wooden skewers from burning while on the grill.
Prepare the oven or grill and preheat to about 200 degrees C or 400 degrees F.
Add chicken into a large mixing bowl.
Add all the ingredients for the marinade into the bowl with the chicken. Stir everything until the chicken breasts are completely covered by the marinade.
Cover the bowl, then place it in the fridge and allow the chicken breasts to marinate for at least half an hour to 2 hours.
Slice the veggies into 1-inch squares.
Thread the onion, bell peppers, and chicken with the soaked skewers. Repeat this process about 3 times.
Arrange them onto a baking sheet, then generously brush each with the marinade.
Place them over the preheated grill or in the preheated oven, then cook for about 20 to 30 minutes or until the chicken breasts are completely cooked.
Remove from the grill or oven, then sprinkle freshly chopped parsley on top to garnish.
