Ingredients:
500g potatoes, peeled and chopped in half
1 Egg
50g Parmesan
2 tablespoons chopped chives
Salt & freshly ground black pepper
12 slices Gouda cheese
6 large slices of ham
200g plain flour
250g fine breadcrumbs
4 Eggs, whisked
Vegetable oil for frying
Directions:
Place a pan with salted water on the stove and turn the heat to medium-high.
Add the potatoes and cook until they are fork-tender. Remove and rinse with cold water.
Mash the potatoes with a ricer into a large mixing bowl.
Add egg, chives, Parmesan cheese, salt, and pepper into the bowl with the mashed potatoes. Stir everything until well mixed.
Put a slice of ham onto a cutting board, then top it with two cheese slices. Repeat the process until all the ham and cheese are arranged in layers.
Press the layers until they are intact.
Slice it into even squares.
Dust your hands with flour.
Scoop 1 tablespoon of the mashed potatoes, then flatten it on your palm.
Get a square of the cheese mixture, then cover it with the mashed potato on your palm.
Repeat the process with the rest of the ingredients.
Place them inside the fridge to chill for about 20 minutes.
Place a large pan on the stove and turn the heat to medium.
Add about 1-inch of oil and allow it to become hot.
In three mixing bowls, add breadcrumbs, egg, and flour.
Dip each square into the flour, egg, then into the breadcrumbs. Shake off any excess. Repeat the process to the rest of the squares.
Add them into the hot oil in batches and cook until they turn golden brown.
Arrange them onto a baking sheet.
Place them inside the preheated oven and bake for about 5 minutes or until done.
Remove from the oven and allow them to cool at room temperature for about 3 minutes.
