This quick and easy casserole has been gracing our family for years! You will surely love the cheesy flavor in each bite. Ready in less than an hour, this Green Chili Chicken Enchilada Casserole is one to try! Serve it for dinner when everyone is around. Enjoy!
Ingredients:
4 oz. canned diced green chilis drained if needed
10.5 oz. cream of chicken soup
⅓ c sour cream
15 oz. canned green chili enchilada sauce
2 c shredded cheddar
2 c cooked chicken, shredded or diced
Salt and pepper to taste
12 6-inch corn tortillas

Directions:
Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Add sour cream, cream of chicken soup, salt, pepper, and ⅓ cup of enchilada sauce into a mixing bowl. Stir until well blended.
Add the green chilis and chicken into the bowl with the soup mixture, then toss until well coated.
Crush 3 tortillas and scatter them into an 8×8-inch baking pan.
Add ¼ cup of enchilada sauce to the prepared baking pan and spread it evenly.
Add ⅓ of the chicken mixture on top, followed by ⅓ cup of enchilada sauce.
Crush 3 more tortillas and scatter them over the enchilada sauce. Repeat the process until everything is arranged in layers ending with the enchilada sauce.
Scatter tortillas over the casserole and make sure to cover the top, followed by the rest of the cheese.
Place it inside the preheated oven and bake for about 25 to 30 minutes or until the cheese has melted completely.
Remove the casserole from the oven and allow it to sit at room temperature for about 10 minutes.

Notes:
You can serve this with black beans and Mexican rice.
