Ingredients:
3 cloves garlic, minced
¼ teaspoon dry ginger
3 tbsp rice wine vinegar
1 tbsp vegetable oil
½ c hoisin sauce
4 boneless, skinless chicken breasts, cut into one-inch cubes
¼ c cornstarch
2 tbsp soy sauce
½ c brown sugar
1 tsp sesame oil
Optional garnish green onions, sesame seeds, and additional red pepper flakes
½ teaspoon crushed red pepper more or less to liking
Directions:
Add the chicken breasts and cornstarch into a mixing bowl, then toss well until the chicken breasts are fully coated.
Place a skillet on the stove and turn the heat to medium-high.
Add oil and allow it to become hot.
Add the chicken breasts into the hot skillet, then sear each side for a few minutes until they turn golden brown.
Transfer the chicken breasts into a slow cooker.
In a mixing bowl, add garlic, soy sauce, brown sugar, ginger, sesame oil, rice wine vinegar, crushed red pepper, and hoisin sauce. Stir everything until well blended. Pour the mixture over the chicken breasts. Give it a good stir until just mixed.
Cover and seal the slow cooker, then cook for about 4 hours on a low setting.
Sprinkle sesame seeds, red pepper flakes, and green onions over each serving to garnish.
Serve right away over rice. Enjoy!
Note:
I recommend you sear the chicken first before adding them to the slow cooker. Searing will give them more flavors!
