Ingredients:
2-3 tbsp extra virgin olive oil
3-4 garlic cloves sliced
1 medium onion sliced julienne
8 boneless pork chops count 2/person
1 ½ c red wine your preference
1 tsp dried rosemary
1 tsp dried thyme
1 tsp salt
1 tsp fresh ground pepper
Directions:
Prepare the oven and preheat to 200 degrees C or 400 degrees F.
Arrange the pork chops into a 9×13-inch baking pan.
Sprinkle rosemary, thyme, salt, and pepper over each pork. Rub until well coated.
Add the onion slices, then toss until well combined with the pork chops.
Add the chopped garlic, then toss until well combined as well.
Pour in the wine and oil on top of the pork chops.
Cover the baking pan with foil.
Place it inside the preheated oven and bake the pork chops for about 30 minutes.
Remove the foil cover, then bake for another 10 minutes or until done.
Remove from the oven and let the pork chops rest for a few minutes at room temperature.
Serve with roasted veggies or potatoes. Enjoy!
