Ingredients:
¼ c chopped fresh parsley leaves
1.5-pound Cod fillet pieces, 4-6 pieces
Lemon Sauce:
5 tablespoons extra virgin olive oil
5 tbsp fresh lemon juice
5 garlic cloves, minced
2 tbsp melted butter
For Coating:
1 tsp ground coriander
¾ tsp sweet Spanish paprika
¾ tsp ground cumin
½ tsp black pepper
¾ tsp salt
⅓ c all-purpose flour
Directions:
Prepare the oven and preheat to 200 degrees C or 400 degrees F.
In a mixing bowl, add lemon juice, olive oil, and melted butter. Stir until well blended.
In a separate mixing bowl, add the pepper, salt, spices, and all-purpose flour. Whisk until well combined.
Use paper towels to pat dry the fish.
Coat the fish with the lemon sauce dip, then into the flour mixture. Shake off any excess flour.
Place a large cast-iron skillet on the stove and turn the heat to medium-high.
Add 2 tbsp olive oil and allow it to become hot.
Add the coated fish into the hot skillet, then sear each side for a few minutes just until brown. Transfer the fish onto a baking sheet.
Add minced garlic into the bowl with the rest of the lemon sauce, then stir until well blended.
Pour the sauce over the fish and spread it evenly.
Place the baking sheet inside the oven and bake the fish for about 10 minutes or until fork-tender.
Sprinkle freshly chopped parsley on top to garnish.
Serve and enjoy!
Notes:
Put any leftovers in an airtight container, then place them inside the fridge. They can last up to 2 or 3 days or 1 month in the freezer.
