Ingredients:
1 ½ c Monterey Jack cheese, grated
Small flour tortillas
⅓ c salsa
2 (14 ounces each) cans of black beans, rinsed and drained
Olive oil, as needed
Kosher salt and freshly ground black pepper, to taste
Juice of 1 lime
2 tbsp taco seasoning
Directions:
Add salsa, lime juice, taco seasoning, and black beans into a food processor. Pulse for a few minutes until chopped completely.
Place a skillet on the stove and turn the heat to medium-high.
Add 1 tbsp of olive oil and allow it to become hot.
Put the bean mixture into the hot skillet, then stir and cook for about 5 minutes. Add salt and pepper to season.
Add some of the mixture in the middle of each tortilla followed by Monterey Jack cheese. Fold the tortilla.
Stove Method:
Place a large skillet on the stove and turn the heat to medium.
Add olive oil and allow it to become hot.
Add the tacos into the hot skillet, then cook each side for about 3 minutes or until golden brown.
Oven Method:
Prepare the oven and preheat to 225 degrees C or 450 degrees F.
Brush with olive oil over each taco, then place them onto a sheet pan. Arrange the tacos in a single layer.
Place the tacos in the preheated oven and bake for about 8 to 10 minutes.
Turn the tacos over and bake the other sides for another 8 to 10 minutes.
Remove from the oven and allow the tacos to rest for about 3 minutes.
Serve warm with cilantro, sour cream, salsa, or guacamole. Enjoy!
