Ingredients:
2 tbsp Dijon mustard
1 tbsp honey
¼ tsp garlic powder
1 c heavy/whipping cream
Flour for dredging
3 tbsp butter, divided
Salt & pepper to taste
⅓ c chicken broth
2 large chicken breasts, cut in half lengthwise
1 tbsp olive oil
Directions:
Slice the chicken into two lengthwise.
Season with salt, pepper, and garlic powder. Toss until well coated.
Coat the chicken pieces with flour as well. Shake off any excess.
Place a skillet on the stove and turn the heat to medium-high.
Add 1 tbsp of butter and olive oil, then allow them to become hot.
Add the chicken into the skillet, then cook each side for about 4 minutes or until they turn golden brown.
Transfer the chicken onto a clean plate.
In the same skillet, add the remaining butter and allow it to melt.
Add honey, chicken broth, and Dijon mustard. Make sure to scrape the bottom of the skillet to get the browned bits. Stir until well blended. Simmer for a few minutes until it reduces its volume.
Add cream and stir until well blended.
Put the chicken pieces back into the skillet, then toss until well-coated with the delicious sauce. Simmer for another 5 minutes.
Serve and enjoy!
Notes:
You insert an instant-read thermometer to check the doneness of the chicken.
Make sure to use boneless chicken breasts for this recipe.
Serve this as is or with mashed potatoes.
