Ingredients:
½ c (54 g) fresh bread crumbs*
¼ c (60 ml) milk
2 Egg yolks
½ c (50 g) grated pecorino Romano cheese
1 tbsp (15 g) kosher salt or 1 ½ teaspoons table salt
1 tsp ground black pepper
2 garlic cloves, finely chopped
1 lb (500 g) ground beef chuck
1 lb (500 g) ground pork
½ c (30 g) fresh Italian flat-leaf parsley or basil, or a mixture of both, roughly chopped
Olive oil
Directions:
Step 1: In a large mixing bowl, add the breadcrumbs and milk.
Step 2: Add cheese, garlic, egg yolks, salt, and pepper. Stir until well mixed.
Step 3: Add the parsley and meat. With your hands, mix everything until well combined.
Step 4: Form balls out of the mixture.
Step 5: Place a large skillet on the stove and turn the heat to medium-high.
Step 6: Add oil and allow it to become hot.
Step 7: Add the meatballs and cook all sides until brown. Make sure to cook them in batches.
Step 8: Cover the skillet with a lid and cook the meatballs for 15 minutes or so.
Step 9: Repeat the process to the rest of the meatballs. Add more oil if needed.
Step 10: Serve hot with marinara sauce. Enjoy!
For Baking the Meatballs:
Step 1: Prepare the oven and preheat to 218 degrees C or 425 degrees F.
Step 2: Apply cooking spray in a rimmed baking sheet.
Step 3: Place the meatballs onto the prepared baking sheet.
Step 4: Place it inside the preheated oven and bake for about 10 minutes or until done.
Step 5: Serve and enjoy!
