Ingredients:
3 tablespoons Olive oil
2 Carrots medium
1 Onion medium
1-pound boneless, skinless chicken thighs
1 c Basmati rice
1 teaspoon Favorite Chicken Seasoning
¼ teaspoon turmeric, optional (for colour)
2 c Chicken broth
1 teaspoon Salt and pepper, to taste
Directions:
Prepare the oven and preheat to 225 degrees C or 450 degrees F.
Place a large skillet on the stove and turn the heat to medium-high.
Add olive oil and allow it to become hot.
Add the onion and sauté until translucent.
Add the carrots and sauté until soft.
Add the chicken, salt, and pepper. Cook for about 5 minutes or until the chicken is golden brown.
Remove the chicken from the skillet and transfer it into a casserole dish.
Add the chicken broth and rice, then stir until well combined.
Cover the dish with aluminium foil.
Place it inside the preheated oven and bake the chicken-rice casserole for about 40 minutes.
Remove from the oven and let it rest for a few minutes at room temperature.

Notes:
Feel free to add about ¼ teaspoon of turmeric to give the dish a yellow colour.
Add less salt if the broth is already salty.
