Ingredients:
15 oz. can of diced tomatoes
1 c uncooked white rice
2 c chicken broth
1.5 lbs. boneless, skinless chicken breasts, cut into 1-inch chunks
1 tsp paprika
2 tbsp butter
1 tsp dried thyme leaves
¾ c frozen green peas
½ tsp ground cayenne
1 green bell pepper, diced
5 cloves garlic, minced
8 oz. smoked ham, diced
1 sweet onion, chopped
Directions:
Place a Dutch oven on the stove and turn the heat to medium.
Add butter and allow it to melt.
Add the chicken, then cook for 5 minutes on all sides or until they turn golden brown.
Add ham, then stir and cook for a few minutes.
Add garlic, onion, and bell pepper. Sauté for a few minutes until aromatic and soft.
Add rice, cayenne pepper, thyme, tomatoes, chicken broth, and paprika. Stir until well blended. Allow the mixture to boil.
Turn the heat down to medium-low, then cover the skillet with the lid. Cook the rice for 20 minutes or until done.
Add green peas, salt, and pepper. Stir until well mixed.
Sprinkle freshly chopped parsley over each serving to garnish.
Serve and enjoy!
Notes:
Feel free not to add cayenne pepper to this recipe if you are not a fan of spicy foods.
You can serve this with roasted mushrooms if you like.
