Ingredients:
1 c uncooked quinoa I love Ancient Harvest
2 c water or low sodium broth for cooking quinoa
4 c fresh broccoli florets
2 tbsp butter
1 ½ c chopped yellow onion
6 cloves garlic minced
2 tbsp oat flour all-purpose will work too
1 c milk I used unsweetened almond milk
8 ounces block of good quality cheddar cheese divided
1 tsp sea salt
1 tsp ground pepper
½ tsp garlic powder
Directions:
Apply cooking spray in an 8×8-inch square dish.
Refer to the directions provided on the package of the quinoa on how to cook it. Transfer the cooked quinoa into a large bowl.
Place a small pot with water on the stove and turn the heat to high, then allow it to boil.
Add the broccoli and steam for about 5 minutes. Drain.
Add the cheese into a food processor, then pulse until shredded.
Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Place a saucepan on the stove and turn the heat to medium.
Add butter and allow it to melt.
Add the garlic and onion, then sauté until aromatic and translucent.
In a mixing bowl, add milk, garlic powder, flour, salt, and pepper. Whisk until well mixed.
Pour the milk mixture into the pan and stir until well blended.
Simmer for a few minutes until the texture of the sauce becomes thick.
Remove the pan from the heat, then add about 2 cups of shredded cheese and whisk until well combined.
Spread the sauce on top of the quinoa and broccoli. Toss everything until well mixed.
Spread the mixture onto the prepared baking dish.
Sprinkle the rest of the cheese over.
Place it inside the preheated oven and bake for about 15 minutes or until done.
Remove from the oven and allow it to cool for a few minutes at room temperature.
