Ingredients:
1 c + 3 tbsp cold Buttermilk
½ c very cold butter, equal to 1 stick.
2 tsp honey
2 ½ c all-purpose flour
2 tbsp aluminium-free Baking Powder, not tsp
1 tsp salt
Topping
1 tbsp butter
2 tbsp honey
Directions:
Prepare the oven and preheat to 218 degrees C or 425 degrees F.
In a mixing bowl, add baking powder, salt, and flour. Whisk until well mixed.
Slice the cold butter into pieces, then toss them into the bowl.
Make a well in the centre of the dry mixture, then add the honey and cold buttermilk. Stir everything until just mixed.
Sprinkle flour onto a flat surface, then lay the dough on it. Form it into a 9-inch rectangle.
Fold the sides, then rotate them horizontally and slightly flatten. Repeat the process.
Shape it again to about a 10×7-inch rectangle.
Slice into about 6 circles, then seal the sides.
Roll out the dough to about 1-inch thick, then slice each into two.
Brush with melted butter a 10-inch cast-iron skillet.
Arrange the biscuits into the prepared skillet. Make sure to leave a small space between each biscuit.
Place the skillet inside the preheated oven and bake for about 15 minutes or until the top turns golden brown.
In a mixing bowl, add melted butter and honey. Stir until well blended.
Brush each biscuit with the melted butter, then bake for another 4 minutes.
Remove from the oven and allow the biscuits to rest for a few minutes at room temperature.
Serve warm and enjoy!
