Chicken breasts in a delicious and creamy sauce! This Sun-Dried Tomato, Spinach, and Bacon Chicken will surely make your day extra special! Take those plain chicken breasts into something very delicious that no one can resist. Enjoy!
Ingredients:
Baked Chicken Breasts:
1 tbsp butter
1.5-pound chicken (4 small chicken breasts or 2 large chicken breasts, sliced horizontally in half)
0.5 ounces Italian Dressing mix packet (half the packet)
Creamed Spinach:
⅛ tsp salt
6 ounces baby spinach fresh
1 tbsp vegetable oil
⅔ c half and half
⅔ c mozzarella cheese, shredded
4 garlic cloves, minced
Other Ingredients:
4 slices Pepper Jack cheese or Monterey cheese with jalapenos
¼ c sun-dried tomatoes, drained of oil, chopped into smaller bites
4 slices of bacon cooked
Directions:
Prepare the oven and preheat to 190 degrees C or 375 degrees F.
Brush the bottom of a baking dish with butter.
Sprinkle the Italian salad dressing mix over the chicken, then rub each until well coated.
Lay the chicken breasts on the prepared baking. Make sure to leave a small space between each chicken breast.
Place the baking dish inside the preheated oven and bake the chicken for about 15 to 20 minutes.
Remove the chicken from the oven and let them rest for a few minutes at room temperature.
For the Creamed Spinach:
Place a large skillet on the stove and turn the heat to medium.
Add 1 tbsp of vegetable oil and allow it to become hot.
Add the spinach, then cook for about 2 minutes or until wilted. Remove and transfer the wilted spinach onto a clean plate.
In the empty skillet, add half & half and minced garlic, then allow the mixture to boil.
Add the shredded mozzarella cheese, then stir and cook until melted.
Turn the heat down to low, then simmer the mixture for a minute or until the texture becomes thick. Remove and set aside.
For the Smothered Chicken Breasts:
Add the sun-dried tomatoes, pepper jack cheese, creamed spinach, and chopped bacon on top of each chicken breast.
Put them back in the oven and bake for 20 minutes.
