Ingredients:
2 large Eggs, beaten
3 c leftover unseasoned cooked rice, chilled
2 tbsp soy sauce
4 tbsp olive oil or butter, divided
½ yellow onion, diced
½ c diced carrot
½ c frozen peas
1 tsp sesame oil
2 cloves garlic, minced or pressed
½ tsp ground ginger
½ tbsp chili garlic sauce plus more to taste
2 tbsp seasoned rice vinegar
2 tbsp hoisin sauce
½ tsp black pepper
salt to taste
cilantro, green onions, sesame seeds, sriracha for garnish, if desired
Directions:
Place a large non-stick skillet on the stove and turn the heat to medium.
Add 2 tbsp of butter and allow it to melt.
Add the ginger, garlic, onion, carrot, salt, and pepper into the hot skillet. Sauté for about 10 minutes or until aromatic and soft.
Move the veggies to one side of the skillet, then add the rest of the butter in the middle and allow it to melt.
Add the egg, then scramble for a few minutes.
Stir everything until well blended.
Add the rice, peas, soy sauce, chili garlic sauce, hoisin sauce, and vinegar. Toss everything until well combined. Stir and cook for a few more minutes.
Add sesame oil and stir until well mixed. Taste and add more seasonings if needed.
Sprinkle your preferred toppings over each serving to garnish.
