Ingredients:
2 tbsp olive oil
4 tbsp butter – use ghee for Whole30.
4 cloves garlic – minced
2 pounds pork tenderloin roast
3 tbsp balsamic vinegar
1 tbsp dried herb mix – basil, Italian seasoning, oregano, and/or thyme
Garnish with rosemary
salt and fresh black pepper
Directions:
Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Rinse the pork tenderloin with water, then use paper towels to pat them dry.
Sprinkle salt and pepper all over the pork tenderloin. Make sure to coat them well.
Place an oven-proof skillet on the stove and turn the heat to medium-high.
Add olive oil and allow it to become hot.
Add the pork tenderloin and sear each side for about a minute or until brown.
Remove the pork tenderloin from the pan.
Add butter and allow it to melt.
Add the garlic and sauté until aromatic.
Add the balsamic vinegar and the dried herb mix, then stir until well blended.
Put the pork tenderloin back into the skillet and toss until well coated by the delicious sauce.
Cover it with tinfoil, transfer the skillet into the preheated oven. Roast the pork tenderloin for about 30 minutes.
Remove the cover and roast for another 30 minutes or until done.
Remove the pork from the oven and let them rest for a few minutes at room temperature.
Serve and enjoy!
Note:
Sprinkle freshly chopped parsley on top.
