Mac and Cheese
2 1/2 c mild cheddar cheese shredded (freshly grated if possible)
2 1/2 c white sharp cheddar cheese shredded
2 1/2 c large elbow macaroni
2 c whole milk
2 12-ounce cans of evaporated milk
1 tablespoon flour
1/2 tablespoon olive oil
4 tablespoons butter
1 1/2 teaspoon salt
1 teaspoon pepper
1 c herb panko bread crumbs
4 tablespoons butter melted
Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Apply cooking spray in a 9×13-inch baking dish.
Put a 5-quart pot with water on the stove, then add the macaroni. Refer to the directions provided on the package on how to cook it.
Drain the macaroni, then drizzle olive oil immediately. Toss until well coated.
Add the pot back on the stove, then reduce the heat to medium-low.
Add butter and let it melt. Add in flour and whisk until well mixed, then cook for about a minute.
Add in the 2 cups of whole milk and whisk until well blended.
Turn the heat up to medium-high, then add the 2 cans of evaporated milk, salt, and pepper. Whisk until well mixed. Simmer for about 10 minutes or until it turns thick.
In a mixing bowl, add in the cheeses and stir until well mixed.
Add about 4 cups of cheese into the pot and stir until melted completely.
Remove the pot from the heat and add the cooked macaroni. Stir until well combined.
Transfer the mixture into the prepared baking dish and spread it evenly.
Sprinkle a generous amount of cheese over.
In a mixing bowl, add the melted butter and Panko bread crumbs. Stir until well mixed.
Sprinkle the mixture on top of the mac and cheese.
Put it inside the preheated oven and bake for 25 minutes or until the top turns golden brown.
