My kids could not get enough of it! Thanks to my best friend, Louise for giving me the recipe. I’m telling you; this is the best meal to serve kids who are not fans of vegetables. If you like, try adding crispy crumbled bacon on top and fried garlic! It’s going to take this dish to the next level! We usually eat this with steamed rice but it is perfect to eat as is. Ingredients:
1 butternut squash, halved lengthwise and seeded
water
1 tablespoon butter, divided
salt and ground black pepper to taste
Directions:
Step 1: Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Step 2: In a 9×13-inch baking dish, arrange the squash in an upward direction then pour in enough water to submerge the squash.
Step 3: Place inside the preheated oven and bake for 1 ½ hours or until the squash is soft and tender. Use a fork to check the doneness of the squash.
Step 4: Peel the squash using a fork. It should peel off easily.
Step 5: Spread over the melted butter on top. Sprinkle salt and pepper to season.
Step 6: Serve and enjoy!
Note:
The cooking time depends on the size and weight of the squash. Normally, it takes about 90 minutes to cook a large squash.
