Ingredients:
For the Roux:
1 heaping cup all-purpose flour
⅔ c oil (vegetable or canola oil)
For the Gumbo:
1 bunch celery, diced, leaves and all
1 green bell pepper, diced
1 large yellow onion, diced
1 bunch green onion, finely chopped
1 bunch fresh parsley leaves, finely chopped
2-3 cloves garlic
1-2 tbsp Cajun seasoning *
6-8 c Chicken broth *
12-oz package andouille sausages, sliced into ‘coins’ (substitute Polska Kielbasa if you can’t find a good Andouille)
Meat from 1 Rotisserie Chicken*
2 c Shrimps, pre-cooked
cooked white rice for serving
Directions:
Place a large pot on the stove and turn the heat to medium-low.
Add the oil and flour. Stir and cook for about 30 minutes or until well blended and dark. Add more flour if needed.
Place a skillet on the stove and turn the heat to medium-high.
Add the sausage slices and cook each side for about 3 minutes or until they turn brown.
Remove the sausages from the skillet onto a clean plate.
In the same skillet, add ½ cup of chicken broth and scrape the bottom to get the brown bits.
Transfer the broth into the large pot.
Add the rest of the chicken broth to the pot as well and stir until well combined.
Add the veggies, roux, and parsley. Stir until well mixed.
Allow the mixture to boil for about 5 minutes or until the vegetables are soft.
Add the Cajun seasoning and stir until well mixed.
Add the shrimp, sausage, and chicken.
Add more seasonings if needed, then stir until well combined.
Serve and enjoy!
