I love this Saucy Hungarian Red Potato Goulash so much that I want you all to taste it! Sausage and potatoes with delicious spices, sound amazing, right? This recipe is my personal favorite. I am very confident that you are going to love it. Enjoy!
Ingredients:
10 medium-size red skin potatoes, peeled and sliced into ½-inch thick circles (about 2 ¾ pounds)
2 onions, quartered and thinly sliced
1 ½ c chicken stock
1 garlic clove, pressed through a garlic press
2 tbsp butter
1 ½ tsp paprika
1 (14 oz.) smoked sausage, sliced on the bias into thin medallions
1 tbsp chopped flat-leaf parsley
Salt
¾ tsp freshly cracked black pepper
Olive oil
Directions:
Place a large non-stick pan on the stove and turn the heat to medium-high.
Add 1 tbsp of oil and allow it to become hot.
Add the sausages, then cook for a few minutes until brown. Transfer onto a clean plate.
Add butter into the empty pan and allow it to melt.
Add the onion slices, then cook for 5 to 7 minutes or until a bit caramelized.
Add garlic and sauté for a minute or until aromatic. Season with salt, pepper, and paprika to taste.
Add the potato slices, then cook both sides for a few minutes or until they turn brown.
Pour in chicken stock, then stir until well mixed. Cover the pan and simmer everything for 15 minutes over medium-low heat.
Remove the cover, then cook the potato slices for 10 more minutes or until fork-tender.
Put the browned sausage back into the pan together with parsley, then stir everything until well combined.
Drizzle a bit of olive oil and season with more salt and pepper if needed.
Serve right away with bread. Enjoy!
