Nothing beats banana cake! This has been my favourite since I was a kid. It is safe to say that this recipe has always been a part of our family since when we were little. My Grandma used to make this all the time. The natural sweetness of the banana is more than enough to make this recipe perfect. Give it a try and I hope you all love it the same way I do. Enjoy!
Ingredients:
Banana Cake:
2 cups all-purpose flour
1 tsp baking soda
¼ tsp salt
½ cup butter, softened
1 ⅓ cups sugar
2 eggs
1 cup sour cream
1 tsp vanilla extract
4 medium bananas, mashed (about 2 cups)
Cream Cheese Frosting:
8 oz cream cheese, room temperature
½ cup butter, room temperature
1 tsp vanilla extract
3 cups powdered sugar
Directions:
Step 1: Prepare the oven and preheat to 350 degrees F or 175 degrees C.
Step 2: Apply cooking spray in two 8-inch cake pans.
TO MAKE THE BANANA CAKE:
Step 1: In a large mixing bowl, add the butter and sugar. Whisk until well mixed.
Step 2: Add in eggs, vanilla, and sour cream. Beat until well mixed.
Step 3: Add in the baking soda, salt, and flour. Beat until well blended.
Step 4: Add in the mashed bananas and stir until well combined.
Step 5: Transfer the mixture into the greased cake pans.
Step 6: Place inside the preheated oven and bake for 35 to 45 minutes or until a toothpick comes out clean after inserting in the middle of each cake.
Step 7: Remove from the oven and let it sit at room temperature to cool.
TO MAKE THE CREAM CHEESE FROSTING:
Step 1: In a medium mixing bowl, add the butter, vanilla, and cream cheese. Beat until well mixed.
Step 2: Add in powdered sugar gently and beat until the texture becomes smooth.
Step 3: Spread the frosting over the cooled cake.
Step 4: Serve and enjoy!
