Ingredients:
VEGETABLES
2 tablespoons olive oil
2 garlic cloves, minced
700g / 1.4 lb baby potatoes, halved
2 red onions, each cut into 8 wedges
2 teaspoons dried thyme
3 carrots, peeled and cut into 2″/5cm pieces
Salt and pepper
1 teaspoon dried oregano
SAUSAGES
Oil spray (optional)
8 – 10 sausages (500-700g / 1-1.4lb)
GRAVY
2 ½ tablespoons flour (plain / all-purpose)
2 c / 500 ml beef broth (or chicken)
2 tablespoons / 30g melted butter, unsalted
Fresh thyme for garnish (optional)
Directions:
Prepare the oven and preheat to 400 degrees F or 200 degrees C.
In a large mixing bowl, add all the ingredients for the veggies. Toss everything until well mixed.
Add the sausages and toss again until well combined.
Empty the bowl into a roasting pan and spread it evenly.
For the Gravy:
Add flour and butter in the same bowl with the veggies. Whisk until well mixed.
Add a little amount of beef broth, then whisk until well blended.
Add the rest of the broth and whisk again until well blended.
Pour the mixture around the pan.
To Bake:
Place it inside the preheated oven and bake for about 25 minutes. Flip the sausages and bake for another 25 minutes or until brown and the potatoes are fork-tender.
Remove from the oven and allow them to rest for a few minutes at room temperature.
Serve with the gravy and enjoy!
Note:
Garnish with freshly chopped thyme leaves.
